
Nicole Speeney was born and raised in Pennsylvania and moved down to North Carolina after graduating from Colgate University with a degree in Psychological Sciences. Nicole also holds her Master's Degree in Nutrition Sciences from the University of Alabama at Birmingham.
Nicole is extremely passionate about helping those who struggle with disordered eating, active eating disorders, body dysmorphia, and she also has a soft spot for athletes as well. What catalyzed Nicole's passion to pursue dietetics was her own experience with disordered eating. Nicole struggled with disordered eating in college, when she was a captain on her Division I softball team. Nicole was under extreme amounts of stress, and held many responsibilities, so she never thought she was "sick enough" to reach out for help. Nicole now understands that her recovery would have progressed much faster and more efficiently with that help. So, now she aspires to be that person for others. Nicole strives to help those who might be going through similar struggles as she did, because navigating wellness in a world that praises toxic diet culture, overcomplicates everything, and spreads an overwhelming amount of misinformation is TOUGH to do solo.
Nicole loves nothing more than demonstrating to her clients that there is a way to live life beyond obsessing over food. She takes a non-diet, weight-inclusive approach, and implements psychology-based mindset practices rooted in intuitive eating principles and nutrition science. Nicole practices through a body neutral approach, and also loves helping clients find their source(s) of joyful movement. Nicole's knack for goal setting shows in her counseling, as she helps to empower others to shift their rigid mindsets around food, body, and movement in order to embrace a balanced life BEYOND just food.
Nicole is the founder of Expedition Nutrition & Recovery, an outpatient nutrition counseling practice that provides medical nutrition therapy and nutrition counseling for individuals struggling with disordered eating and eating disorders. Nicole has extensive experience in eating disorder care, and is a member of the International Associationof Eating Disorder Professionals Foundation (IAEDP), as well as Eating Disorder Registered Dietitians and Professionals (EDRD Pro). Nicole has completed advanced clinical training and continuing education in the treatment of eating disorders and practices within a multidisciplinary model of care in alignment with evidence-based standards. Nicole has spoken at different events, and worked with many athletes, from the elementary school level to the Division I level. Nicole majorly expanded her reach in 2024, when she signed a contract with B Balanced Counseling & Wellness in Winston Salem, NC, as the sole RD on staff. At B Balanced, Nicole has the unique opportunity to strike the intersection between her passion for mental health and eating disorder care / nutrition counseling even more directly. Nicole's B Balanced cases are typically pretty complex and multifaceted, and since she sees those clients in state and in person, many have mental health diagnoses, and typically, an active eating disorder as well. Nicole's youngest client is a 9 year old female with ARFID, and her oldest is a 56 year old male with Binge Eating Disorder. Nicole is an advocate for her clients, as she believes that access to and coordination of care are key to providing the highest quality of care in the outpatient setting. Nicole is licensed in multiple states and accepts insurance.
Outside of dietetics, Nicole loves crossfit, being outdoors, spending time with her friends, family, and puppy, Lily, going to concerts and trying new recipes with her husband, Andrew! Nicole is Italian, her favorite color is yellow, and she prefers hot coffee over iced coffee.
